Spicy Savory Stuffed Mushrooms

Fresh mushrooms stuffed and baked with Italian sausage, onion and mozzarella cheese make a great hot appetizer.
Ingredients
- 1 lb fresh white button or brown cremini mushrooms
- 1/2 lb Italian sausage (pork or turkey)
- 1/4 cup chopped onion
- 3 Tbsp Worcestershire sauce
- 2 Tbsp red wine
- 1/4 cup bread crumbs
- 2 Tbsp sour cream
- 1/4 cup shredded mozzarella cheese

Brown sausage, stirring to break up. Drain any grease. Clean mushrooms and remove stems. Chop mushrooms stems (and any broken mushroom pieces). Add chopped mushroom and onion to sausage and saute for 5 minutes. Stir in Worcestershire sauce and red wine. Cook on medium heat 2 minutes. Stir in bread crumbs, sour cream, and cheese. Cook on low heat until cheese is melted, about 2 minutes. Pile spoonful of mixture onto each mushroom cap. Place filled caps in flat 9 x 13 baking dish. Bake at 350 degrees for 30 minutes. Sprinkle with additional Worcestershire sauce, if desired.
Notes: I developed this recipe because I found many purchased stuffed mushrooms to be too bland, too meaty, or too full of bread crumbs. These have a variety of tastes and textures and have been a real crowd pleaser. They also freeze and reheat well.
