Spicy Spinach Fondue

This "spicy" fondue uses "hot" pepper-jack cheese, with frozen spinach and cream cheese. For a less-"hot" version, try Monterey Jack or Cheddar.
 

Ingredients

  • 1 tablespoon butter
  • 8 cups pepper-jack or Monterey Jack cheese
  • 1 8 oz. pkg. cream cheese, cut up
  • 1/4 cup milk
  • 1 10 oz frozen chopped spinach, well-drained and chopped finely
  • 1/4 cup finely chopped onion
  • 1 bag tortilla chips
  • Assorted vegetables for dipping

Method

Melt butter in fondue pot over medium-low heat. Add cheese, about 2 cups at a time, stirring to melt. Stir in cream cheese until melted. Add milk, spinach, and onion; heat and stir until bubbly. Use chips and vegetables to dip.
