These appetizers are "hot," both in temperature and in spiciness. They're made by wrapping pieces of cooked chicken and halved jalapeno peppers with bacon strips, securing them with toothpicks, then baking.
In a skillet, drizzle olive oil to coat bottom; heat on medium heat. Cut up chicken into small cubes and cook in skillet until tender. Add salt and pepper to taste. Cut jalapenos in halves and remove seeds. (Make sure you wear gloves or your hands will burn!) Place chicken chunks in jalapeno halves and wrap with bacon. Use a toothpick to hold together. Preheat oven to 350 degrees. Bake until bacon is crispy.
Notes:
Please use gloves when cutting and seeding jalapenos. I forgot to do so and my hands burned for days. I tried everything to remove the heat, but it took time.
