Method
Preheat oven to 375 degrees. Open pizza dough onto cutting board. Stretch out in all directions until dough reaches edges. Sprinkle garlic salt lightly over dough. Leaving about 2 inches across at the top, lay provolone cheese slices, slightly overlapping, across dough. Spread spinach evenly across cheese, then layer proscuitto. Dollop ricotta cheese in 4 places, then spread across. Bring top 2 inches of dough across ingredients and tuck under with fingers to ensure that roll will be tight. Continue to roll about 3 times, or until any holes are covered by more dough. There will be extra dough and this will need to be cut off. Slice roll into 2 inch pieces. Place on cookie sheet, about 2 inches apart, that has been lightly oiled with olive oil. Sprinkle pieces lightly with more garlic salt and brush with remaining olive oil. Bake in preheated oven for about 10-12 minutes until golden brown on top.
