Spinach & Artichoke Dip

This combo of chopped artichoke hearts, chopped frozen spinach, and mayonnaise is flavored with both parmesan and monterey jack cheese, then warmed in the oven. Serve with fresh vegetables and crackers.
 

Ingredients

  • 1 (14 oz.) can artichoke hearts, drained
  • 1 (10 oz.) pkg. frozen chopped spinach thawed & well drained
  • 1 cup mayonnaise
  • 1 cup grated Parmesan cheese
  • 2 1/2 cups shredded monterey jack cheese

Method

Preheat oven to 350 degrees. Grease a one quart baking dish. Chop artichokes finely. In a bowl, mix together chopped artichoke, spinach, mayonnaise, parmesan cheese, & 2 cups of the jack cheese. Transfer mixture to prepared baking dish; sprinkle with remaining 1/2 cup jack cheese. Bake in the middle of the preheated oven until heated through and cheese is melted, about 15 to 20 minutes.
