Spinach Cheese Pie

A classic spinach pie, made with Italian cheeses, which is easy to make. This can be served as a main dish or as an appetizer. Add ham or bacon for some extra flavor.
 

Ingredients

  • 1 10oz pckg frozen chopped spinach (thawed & drained)
  • 1/2 Cup grated Parmesan or Romano cheese
  • 1 (2 pound) container ricotta cheese
  • 3 eggs
  • 1/8 tsp ground black pepper
  • 1/2 tsp salt
  • 1 (8 inch) pie crust

Method

Preheat oven to 350 degrees. Thaw & thoroughly drain spinach but do not cook. Combine spinach with cheeses, eggs, pepper/salt & mix well. Put mixture into pie crust & bake about 30 minutes or until set in the center.

 

Notes: You can serve hot or cold. Diced ham or crumbled bacon may be added to spinach. Makes (2) main course or (6) appetizer servings.
