
Fold over pizzas baked with spinach, ricotta and mozzarella cheeses make a great appetizer or fun main dish. Don't forget the hot marinara for dipping.
1. Heat oven to 400. Unroll pizza dough and cut in half.
2. Saute onion in olive oil until soft.
3. For each calzone: Spread 1/2 c ricotta, 1/4 c spinach, 1/4 of the onion mixture and 1/4 of the cheese over one side of the pizza dough. Fold over, crimp edges with fork and place on cookie sheet.
4. Bake 15 minutes until hot and golden brown. Let stand 5 minutes before serving.
5. Serve with heated pasta sauce for dipping.
