Spinach and Shrimp Pizza

This pizza is simple to make and has such great flavor from the jumbo shrimp, to the spinach, to the cream cheese sauce. This makes a great appetizer or main dish.

Ingredients:

  • 1 refrigerated pizza crust
  • 2 tbsp of extra virgin olive oil
  • 1 tbsp Italian seasoning
  • 8 ounces of cream cheese, softened
  • 1 cup mayonnaise
  • 1/2 cup of marinara sauce, plus 1/4 cup
  • 1-2 cups shredded mozzarella cheese
  • 10 ounces of frozen spinach, thawed and drained
  • About a dozen jumbo shrimp, cleaned, deveined, and tails removed
  • 1 tbsp grill seasoning
  • 1 tsp crushed red pepper

Method

Prepare pizza crust in oven per package instructions. After you have baked the pizza crust and removed it from the oven, brush it lightly with extra virgin olive oil and sprinkle Italian seasoning over the oil. In a bowl combine softened cream cheese, mayonnaise and 1/2 cup of marinara sauce. When thoroughly mixed, spread over crust. Next sprinkle on mozzarella cheese until covered in thin layer, or thick if you prefer. Sprinkle on thawed and drained spinach. Next split each shrimp in half length wise and disburse over the pizza. Sprinkle grill seasoning and red pepper on top of each shrimp. Take the remaining 1/4 cup of marinara sauce and drizzle over toppings. Return pizza to the oven on broil until shrimp are pink and mozzarella has browned, approximately 5 to 10 minutes.
