Spring Rolls

Spring roll wrappers (also called rice paper) are filled with shrimp, rice noodles, mixed greens, carrots, cilantro, and peanuts, drizzled with a little lime juice, and rolled up.
 

Ingredients

  • 6 Spring Roll Wrappers (Rice Paper)
  • 2 1/2 cups cooked Rice Noodles or Vermicelli
  • 1 1/2 cups Mixed Baby Greens
  • 1/2 cup Carrots cut in matchstick pieces
  • 12 Cooked medium-size shrimp
  • 1 cup chopped Cilantro
  • 1/4 cup Crushed peanuts
  • Lime juice
  • Thai Peanut Sauce (for dipping)

Method

1. Set up all ingredients buffet-style in preparation order: wrappers, noodles, baby greens, carrots, shrimp, cilantro, crushed peanuts, and lime juice. 2. Prepare a rice wrapper by soaking in hot water. (A wrapper placed in a deep plate in the sink works well if you slowly add hot/warm water) Handle soft wrapper gently and place flat on wax paper. 3. Add ingredients from buffet line in order to the wrapper. Do not add directly in the center. Make a rectangle shape of ingredients next to an edge, if possible. (Keep in mind to leave enough room for rolling.) Also, allow two shrimp per roll and sprinkle with peanuts and lime juice before rolling. 4. After all ingredients are on wrapper, fold two opposite corners towards the center, and then roll like an egg roll. 5. Place finished roll on a bed of mixed greens and cilantro. 6. Make remaining 5 rolls using steps 2 through 5. 7. When finished, garnish with more cilantro, crushed peanuts, and sprinkle lime juice on top. These can be refrigerated until served. 8. Serve with Thai peanut sauce for dipping!

 

Notes: All ingredients can be found in a grocery store. Rice wrappers can also be found in an Asian food store. Thai peanut sauce can be store-bought for convenience. I think, if used, this recipe would be best explained with diagrams. Otherwise, it could be very confusing!
