
Bite size pieces of potato that have been sauteed to golden brown with garlic and served with chives and parsley.
Using a melon baller, scoop flesh from potatoes into balls. in a large saucepan, combine potatoes and enough water to cover. Bring to a boil over high heat. Reduce heat to medium and cook until just tender, about 3 minutes. Drain in colander.
Spray a large nonstick skillet with cooking spray. Heat skillet over medium heat. Add garlic. Cook stirring constantly, for two minutes. Add potatoes and salt. Cook over medium high heat, stirring occasionally, until potatoes are tender and golden, about 10 minutes. Discard garlic.
Place potatoes in serving dish and sprinkle with parsley, chives, and pepper.
