A traditional Italian soup with spinach, cheese, and an egg which has been dropped in.
Ingredients
- 1 can Chicken Soup, prepared according to directions
- 1 large egg
- 1 tbsp freshly grated Parmesan cheese
- 5 ounces fresh spinach

Method
1. Have soup simmering gently. 2. Beat egg lightly in a bowl with grated cheese. 3. Slowly stir in 1 cup of the hot broth and mix until blended. 4. Add spinach to the simmering soup and cook for 2 minutes. 5. Bring soup to a gentle boil and beat in egg mixture with a fork so it breaks into clumps. 6. Let cook gently for another 2 to 3 minutes and serve immediately.
