Ingredients:
| 1 lb | Sweet Potato |
| 4 oz | Cream Cheese |
| 1 Tbsp | Butter |
| ½ cup | Chopped Bacon |
| 1 Tbsp | Flour |
| 1 | Egg |
| ¼ cup | Flour |
| ½ cup | Panko or Bread Crumbs |
| 4 Tbsp | Olive Oil |
Directions:
Preheat oven to 430 degrees. Cut sweet potato into small cubes and boil until tender; drain and mash. Transfer to bowl. Add cream cheese, butter, bacon, flour, and pepper; mix well. Shape into golf ball size balls. Coat with flour, then dip into beaten egg and coat with panko. Pour olive oil over croquettes. Bake for 15 minutes or until golden brown.
Helpful Tips:
Bacon, cream cheese and mashed potato croquette. I baked instead of deep fried so it is lower in calories and healthier too.
