Sweet Potato Pocket Pies

A mashed sweet potato mixture with brown sugar and butter is flavored with curry powder and spices, and hidden inside pockets of puff pastry. Serve with Cool Yogurt Sauce, if you wish.
 

Ingredients

  • 2 sweet potatoes (steamed or baked)
  • 2 Tbls butter
  • 1/2 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp garlic powder
  • 1/4 C. brown sugar
  • Purchased frozen puff pastry sheets
  • Egg wash
  • Sesame seeds
  • Cool Yogurt Sauce (optional)

Method

Thaw puff pastry in fridge. After baking or steaming sweet potatoes remove meat from skin and place in bowl. Add the next 6 ingredients, and gently mash with a fork. Small lumps are fine. After pastry is thawed, roll out to a 12-inch square, and cut into 4" squares. Fill each square with 1 Tbsp of filling. Fold up corners to meet in the middle over filling. Brush with egg wash (beaten egg + 1 tbsp. water) and sprinkle with sesame seeds. Bake according to pastry directions. Serve with Yogurt Sauce, if desired. Cool Yogurt Sauce: 1 8oz container plain low-fat yogurt 1/2 cucumber, seeded 2 tsp mint leaves 2 tsp cilantro 1 tsp dillweed Place all ingredients into food processor and blend.
