Sweet & Salty Ravioli Snack

These appetizers offer two fillings and two sauces--you may select the sweet version with a chocolate sauce or the savory with ricotta & herbs.
Ingredients
- 2 cups regular pasta dough
- Sweet filling:
- 1 cup grated coconut, fresh or dry
- 1/2 cup brown sugar
- 1/2 cup water
- Pinch of minced ginger
- Salty filling:
- 1 cup ricotta cheese
- 1/4 cup chopped fresh basil
- 1/2 cup tomato paste
- 1/4 cup onion, finely chopped
- 1 teaspoon lightly fried and ground cumin seed
- 1 teaspoon crushed red pepper, or to taste
- Salt
- Sauce #1:
- 1/2 cup semisweet chocolate chips
- 1/2 cup milk or cream
- Few drops vanilla essence
- Sauce #2:
- 1 cup lightly packed mint leaves
- 2 teaspoon olive oil
- 1 minced jalapeno pepper
- 1 teaspoon lemon juice

Method
Divide pasta dough into 4 parts. Roll out all 4 parts into thin sheets. For sweet filling, bring water to boil. Add grated coconut, brown sugar, and ginger and cook until mixture becomes thick and sticky. For salty filling, crumble cheese and mix with rest of ingredients to make a thick mixture. Spoon small portions of fillings onto dough sheets, 1-2 inches apart. Use separate dough sheets for sweet and salty preparations. Cover with another sheet. Cut into single rectangular units and press edges together to seal filling. Place ravioli in boiling water until cooked. In the meantime, make sauces. For Sauce #1, heat milk in a sauce pan. Add chocolate chips. Once chocolate has melted, stir in vanilla essence. For sauce #2, grind mint leaves and jalapeno into a thin paste with little water and strain. Heat olive oil in a pan. Add heated oil to mint paste along with salt and lemon juice and mix well. Once ravioli is cooked, drain well. Serve sweet ravioli along with chocolate sauce as a dip or you can drizzle sauce on top of ravioli. Similarly, mint sauce can be served with salty ravioli.
