Swiss, Bacon and Crab Dip with Potato Crisps

A warm cream cheese dip with crumbled bacon, crabmeat and Swiss cheese, is seasoned with Tabasco, Worcestershire and crushed pepper, and served with crisp potato slices.
 

Ingredients

  • 1 cup cream cheese (at room temperature)
  • 2 tablespoons mayonnaise
  • 6 slices bacon, crisp-cooked and finely chopped
  • 1 cup shredded Swiss cheese or other cheese
  • 1 6-oz can crabmeat, drained and flaked
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Tabasco sauce, or to taste
  • 1/2 tablespoon Worcestershire sauce
  • 1/2 teaspoon hot pepper flakes, or to taste
  • 1 tablespoon finely chopped sweet onion
  • 1/2 teaspoon salt
  • 1 teaspoon chopped chives
  • Paprika
  • 4 russet potatoes, peeled and sliced into 1/8-inch thick rounds
  • 1/4 cup butter, melted
  • Salt, to taste

Method

Dip: Preheat oven to 350 degrees. In a bowl, mix together cream cheese, mayonnaise, bacon, Swiss cheese, crabmeat, lemon juice, Tabasco, Worcestershire sauce, hot pepper flakes, onion, salt and chives. Spoon mixture into a baking dish and sprinkle with paprika. Bake 20 minutes, until bubbling and hot. Cover and keep warm. Chips: Turn oven up to 450 degrees. Dry potato slices between paper towels; arrange slices in a single layer on a buttered sheet pan. Coat potatoes with butter and bake about 15 minutes or until edges are golden brown. Sprinkle lightly with salt and serve with warm dip.

 

Notes: Chopped fresh tomatoes and finely chopped and shredded lettuce, can be sprinkled on top of the hot dip to make a Cheesy Crab BLT Dip. The dip can also be prepared ahead of time and simply heated for a party.
