Tahela's Stuffed Mushrooms


Serve these mushrooms stuffed with bacon at your next gathering. Lemon juice adds zip to the filling.



Ingredients:

  • 12 large fresh mushroom caps, rinsed & drained
  • Butter
  • Salt
  • Ground nutmeg
  • Pepper
  • 12 mushroom stems, finely chopped
  • 1 tbsp. chopped green onion
  • 1 egg, beaten
  • 1 tbsp. lemon juice
  • Finely chopped parsley
  • 5 slices bacon, crisp-cooked and crumbled
  • Fine bread crumbs

Method

Place mushroom caps in shallow baking dish. Dot with butter; sprinkle lightly with salt, nutmeg, and pepper. Bake at 400 degrees for 10 minutes. Saute mushroom stems and green onion in a small amount of butter. Remove from heat. Add egg beaten with lemon juice, parsley, and a little salt and pepper. Add bacon and enough bread crumbs to hold filling together. Fill mushroom caps; top with additional crumbs. Dot with additional butter. Bake for 10 minutes more. Serve immediately.

Notes: These stuffed mushrooms are so tasty that I frequently double the recipe.
