The Best New Mexico Taquitos

These taquitos have an easy filling of canned roast beef with gravy and chopped onion. The mixture is tightly rolled up inside corn tortillas, which are then fried until crisp, and served with salsa and guacamole.
 

Ingredients

  • 2 large cans roast beef with gravy
  • 1/2 onion, chopped
  • 18-24 corn tortillas
  • Oil
  • Salsa
  • Guacamole

Method

Combine roast beef and onion in skillet and cook, stirring to break up meat, until most of the liquid is gone. Soften corn tortillas one at a time by placing in a small amount of hot oil for just a few seconds. Drain on paper towels. Place about 2 Tbs. meat on each and roll up like a cigar. Heat oil in skillet. Using tongs, place taquitos seam-side down in the hot oil and fry until crisp, turning once. Drain on paper towels and keep hot in paper-lined pan in low oven. Serve with salsa and guacamole.
