Tofu, edamame and artichoke hearts make this cream dip healthier than typical party food--just mix, bake and serve with tortilla chips, pita slices or bread cubes.

Ingredients:

8 oz Cooked & Shelled Edamame
3 oz Firm Tofu
14 oz can Artichoke Hearts
1 clove Garlic
¼ cup Shredded Parmesan Cheese
½ tsp Cayenne Pepper

Directions:

Preheat oven to 400 degrees. In a food processor, combine edamame, tofu, artichoke hearts, garlic, Parmesan cheese (reserving a tablespoon to sprinkle on top) and 1/4 tsp cayenne pepper. Blend until ingredients are mixed but still slightly lumpy. Place in a small glass baking dish. Sprinkle with remaining Parmesan cheese and 1/4 teaspoon cayenne pepper. Bake 40 minutes, or until cheese is melted and slightly browned on edges.

Serve warm with tortilla chips, pita slices or French bread cubes.
