|8 oz||Cooked & Shelled Edamame|
|3 oz||Firm Tofu|
|14 oz can||Artichoke Hearts|
|¼ cup||Shredded Parmesan Cheese|
|½ tsp||Cayenne Pepper|
Preheat oven to 400 degrees. In a food processor, combine edamame, tofu, artichoke hearts, garlic, Parmesan cheese (reserving a tablespoon to sprinkle on top) and 1/4 tsp cayenne pepper. Blend until ingredients are mixed but still slightly lumpy. Place in a small glass baking dish. Sprinkle with remaining Parmesan cheese and 1/4 teaspoon cayenne pepper. Bake 40 minutes, or until cheese is melted and slightly browned on edges.
Serve warm with tortilla chips, pita slices or French bread cubes.
