Tomato, Basil & Feta Dip

Chopped tomatoes and garlic are drizzled with oil, broiled briefly, then combined with basil and crumbled feta cheese to served chilled as a dip for pita chips.

  • Servings: 6

Ingredients:

2½ cups Peeled, seeded and chopped ripe tomatoes
2 cloves Garlic, minced
Salt & Freshly Ground Black Pepper, to taste
Extra Virgin Olive Oil
10 Fresh Basil Leaves, chopped
8 oz Crumbled Feta Cheese
Baked Pita Chips, for serving

Directions:

Preheat broiler. Combine tomatoes and garlic in a medium bowl. Season lightly with salt and pepper; stir gently. Spread mixture in an even layer on a baking sheet with sides; drizzle lightly with oil. Broil about 1 minute, or until tomatoes begin to soften slightly. Sprinkle with chopped basil; cool completely. Combine cooled tomato mixture and feta in a large bowl. Stir gently until mixed. Cover and refrigerate 1 hour. Serve with pita chips.
