Tomato, Basil and Feta Dip

Chopped tomatoes are drizzled with oil, broiled briefly, then combined with basil and crumbled feta cheese to served chilled as a dip for pita chips.

  • Servings: 6


2 Large Ripe Tomatoes, peeled, seeded and chopped
⅛ tsp Garlic Powder
Fine Sea Salt & Freshly Ground Black Pepper, to taste
Extra Virgin Olive Oil
10 Fresh Basil Leaves, chopped
4 oz Crumbled Feta Cheese
Baked Pita Chips With Sea Salt, for serving


Preheat broiler.

Spread tomatoes in an even layer on a baking sheet; sprinkle with garlic, salt and pepper. Drizzle lightly with oil. Broil about 1 minute, or until tomatoes begin to soften slightly. Sprinkle with chopped basil; cool completely.

Combine tomatoes nd feta in a large bowl; Stir gently until mixed. Cover and refrigerate 1 hour. Serve with pita chips.
