Tomato, Basil & Feta Dip

Ingredients:
| 2½ cups | Peeled, seeded and chopped ripe tomatoes |
| 2 cloves | Garlic, minced |
| Salt & Freshly Ground Black Pepper, to taste | |
| Extra Virgin Olive Oil | |
| 10 | Fresh Basil Leaves, chopped |
| 8 oz | Crumbled Feta Cheese |
| Baked Pita Chips, for serving | |
Directions:
Preheat broiler. Combine tomatoes and garlic in a medium bowl. Season lightly with salt and pepper; stir gently. Spread mixture in an even layer on a baking sheet with sides; drizzle lightly with oil. Broil about 1 minute, or until tomatoes begin to soften slightly. Sprinkle with chopped basil; cool completely. Combine cooled tomato mixture and feta in a large bowl. Stir gently until mixed. Cover and refrigerate 1 hour. Serve with pita chips.
