Tomato Bruschetta

Chopped tomato, onion, basil and garlic are combined and spooned on thin French bread slices, spread with olive oil and toasted.
 

Ingredients

  • 3 ripe medium tomatoes
  • 1 small onion
  • 2 tablespoons fresh basil leaves, chopped (OR 2 teaspoons dried basil leaves, crushed)
  • 1 garlic clove, pressed
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground black pepper
  • 24 slices French bread, cut 1/4-inch thick
  • 2 tablespoons olive oil

Method

Preheat oven to 375F. Cut tomatoes in half; squeeze out seeds. Chop tomatoes and onion. Transfer to bowl using a scraper. Add basil to tomato mixture. Add garlic, salt and pepper; mix gently. Place bread slices on a baking stone or cookie sheet. Lightly brush surface of bread with olive oil. Bake 10-12 minutes or until lightly browned and crisp. Remove bread from oven; scoop tomato mixture onto toast slices, and serve immediately.
