Traditional Chutney Cheese Tea Sandwich

Your guests will love these tiny pumpernickel sandwiches filled with chutney and thinly sliced cheese.
Ingredients
- 2 Tbsp prepared chutney of your choice
- 1 tsp powdered mustard
- 1/4 cup cider vinegar
- 1 clove garlic (quartered)
- 1 tsp sea salt
- 2 Tbsp sugar
- 1/4 cup vegetable oil
- 18 very thin slices of good quality pumpernickel bread
- 1/2 lb thinly sliced Alpine Lace Cheese
- Butter at room temperature

Method
Place first 7 ingredients in blender or food processor and process until smooth. Set aside. Lay bread slices on a sandwich board and spread a thin layer of butter on each slice. (Do not omit the butter as it prevents the sandwiches from getting soggy). Evenly distribute the cheese slices on 9 pieces of buttered bread. Spread chutney on the remaining 9 pieces of buttered bread. Build each sandwich as follows: Put one piece of bread that has been spread with butter and chutney atop a piece of bread that has been spread with butter and has slices of Alpine Lace cheese. Gently press the sandwich down and trim crust. Cut in quarters on the diagonal.
Notes: Serve at your tea party, buffet, or cocktail party.
