Triple Nut Biscotti


These biscotti are full of nuts and chocolate. What a great addition to your morning cup of coffer or finish to a great dinner.



Ingredients:

  • 1/2 cup chopped almonds
  • 1/2 cup chopped hazelnuts
  • 1/2 cup chopped walnuts
  • 3 large eggs
  • 2/3 cup sugar
  • 1 tsp almond extract
  • 2 cups flour
  • 1/3 cup hazelnut flavored coffee powdered creamer  
  • 3/4 cup baking powder
  • 1/8 tsp salt
  • 1 cup chocolate chips
  • 1 cup melted bitter sweet chocolate

Method

Preheat oven to 350 degrees. Toast nuts for 6-8 minutes and set aside. In a large bowl, beat sugar and eggs on a high speed until thick. Beat in almond extract. In a separate bowl, mix flour, creamer, baking powder and salt. Add flour mixture to egg mixture. Beat until well combined. Fold in toasted nuts and chocolate chips. On a parchment lined baking sheet, form dough into a log. Bake for 27 minutes. Let it cool on a wire rack for 10 minutes. Cut log into diagonal slices 1 inch thick. Bake biscotti, cut side down, for 12 minutes each side. Let cool then brush melted chocolate on top of each biscotti.
