Tropical Grilled Chutney

This is a great side dish with pork, fish, chicken or anything. It can also be served with chips as a dip. The habanero adds some heat to the sweet.
Ingredients
- 1 fresh pineapple, cored and skin removed
- 1 medium red onion
- 1/2 habanero pepper, finely chopped
- Juice of 1-2 limes
- 1 tablespoon dark rum
- 2 tablespoons chopped fresh cilantro
- 1/4 cup flaked sweetened coconut

Method
Cut pineapple into strips or big chunks. Cut onion into 3 big slices. Grill pineapple and onion over medium heat until slightly charred. Toast coconut in a dry pan on grill until slightly browned. Chop pineapple and onion into small pieces and toss in a bowl with other ingredients.
