Turkey Meatball Pie

Ground turkey is a healthier alternative to any recipe and this literally becomes meatloaf in a pie dish.

Ingredients:

  • 1 uncooked deep 10 inch pie crust
  • 1 pound raw ground turkey
  • 1/2 cup chopped onion
  • 1/2 cup bread crumbs
  • 2 egg whites
  • 1/4 cup cream
  • 1 teaspoon ground sage
  • 1 teaspoon ground black pepper
  • 1/4 cup butter, melted
  • 1/2 cup oil
  • 1 cup tomato sauce
  • 1/2 cup thin sliced green pepper
  • 1/2 cup thin red or yellow pepper
  • 1 cup shredded smoked cheese
  • 2 cup shredded brick cheese
  • 1 cup yellow cheese

Method

Preheat oven to 375 degrees. In large bow, mix turkey, onion, bread crumbs, egg whites, cream, sage, black pepper and butter, then mix well. Form mixture into little balls. Place large skillet on medium heat. Pour oil in skillet. Place turkey meat balls in skillet and cook until brown and done, about 10 minutes. Place sliced green pepper in pie and top with 1/2 tomato sauce. Place smoke cheese over sauce and top with red or yellow pepper. Place all meat balls on top of pepper. Place remaining tomato sauce on top of meat balls. Add brick cheese on top. Bake for 20 minutes. Cool and sprinkle yellow cheese on top.

Notes: I like to use egg whites in my meat loaf. You can use 2 whole eggs instead.

Number of servings: 6-8
