Ingredients:
| ½ | Red Onion, minced |
| ½ cup | Olive Oil |
| 2 Tbsp | Balsamic Vinegar |
| ¾ cup | Sun Dried Tomatoes, chopped |
| ½ cup | Chopped Green Olives |
| ½ cup | Chopped Fresh Basil |
| Salt & Pepper, to taste |
Directions:
In a small skillet over medium heat, saute onion in half the olive oil, until soft. Stir in vinegar. Add remaining oil and all other ingredients, then chill. Serve with bruschetta or sliced artisan bread.
