Ultimate Crab Cakes

Horseradish, mustard and Tabasco add a kick of flavor to tender crab cakes.
Ingredients
- 1 lb crab meat
- 2 eggs, slightly beaten
- 3 tsp cream style horseradish
- 3 tsp prepared spicy mustard
- 1/8-1/4 tsp Tabasco or other hot sauce
- 1/8 tsp paprika
- 1/4 tsp salt
- Pinch black pepper
- 2 tbsp minced fresh parsley
- 2 tbsp + 3 tsp mayonnaise
- 1/4 cup breadcrumbs or more
- Extra virgin olive oil for frying

Method
Mix all ingredients together. Shape into patties and fry in oil over medium heat for 4 minutes on each side, or until golden brown.
