Veggie Filling

This filling or spread combines cucumber, radishes, onion, carrot, and cashews with salad dressing, dijon, garlic powder, and plenty of pepper.
Ingredients
- 1 medium cucumber, seeded, shredded, and well-drained of excess liquid
- 4-6 radishes, shredded
- 1 small onion, chopped
- 1 large carrot, shredded
- 1/2 cup cashews, chopped
- 4 Tbsp Miracle Whip salad dressing or mayonnaise
- 2 Tbsp dijon mustard
- 1 1/2 Tbsp black pepper (or to taste)
- 1 tsp garlic powder

Method
Combine shredded vegetables with cashews. Mix salad dressing, mustard, pepper and garlic powder. Combine with vegetable-cashew mixture. Chill for an hour to blend flavors. Serve as a sandwich spread on a whole wheat bagel, or in a wrap with cheese, or as a simple spread for crackers.
