Warm Tomato and Chevre Salad

A baked puff pastry layer brushed with Dijon mustard forms the base of this appetizer or side dish. Tomatoes, basil, and chevre go on top.
Ingredients
- 1 sheet frozen puff pastry, thawed
- 1/4 cup Dijon-style mustard
- 1/2 cup fresh basil leaves, chopped
- 2 dozen small tomatoes, halved
- 1/2 cup chevre (goat cheese), crumbled
- 2-3 Tablespoons extra-virgin olive oil

Method
Preheat oven to 450 degrees. Arrange pastry on baking sheet and prick all over with a fork. Bake for 8-10 minutes. Remove from oven and allow to cool for 5 minutes. Brush mustard over entire surface of tart. Sprinkle with basil and arrange tomatoes on top. Distribute chevre evenly over tomatoes. Drizzle with oil. Return tart to oven and bake for 8-10 minutes or until golden brown.
Notes: A light, crisp white wine compliments this dish perfectly.
