Wasabi Shrimp Crackers

These are easy to make and very tasty. Serve them on a bed of mixed greens that have been washed and well dried so the crackers don't absorb the moisture.
 

Ingredients

  • 8 ounces low fat cream cheese, softened
  • 3-4 teaspoons wasabi paste
  • 30 2 inch thin rice crackers
  • 30 medium shrimp; peeled, cooked and halved lengthwise
  • 1 green scallion, thinly sliced
  • 6 tablespoons sweet chili sauce, optional

Method

Puree cream cheese, with wasabi to taste, in a food processor until smooth. Mound 1 teaspoon cream cheese mixture on each cracker and top with 2 shrimp halves. Sprinkle with scallion. Top each with a teaspoon sweet chili sauce, if desired. Serve immediately.
