White Bean Bruschetta

This crowd pleasing appetizer spread tastes great with toasted bruschetta slices or pita crisps.
Ingredients
- 1 clove garlic, minced
- 2 shallots, finely chopped
- 5 Tbsp extra virgin olive oil
- 1 15 oz can canellini beans, drained and rinsed
- 1 15 oz can diced tomatoes, Italian style
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh rosemary, chopped
- Kosher salt
- Fresh ground pepper

Method
In a skillet, over medium heat, saute the garlic and shallots in 2 tbsp of olive oil until tender, about 3 minutes. Add canellini beans and remaining 3 tbsp olive oil to garlic and onions. Cook until beans are tender, about another five minutes. Once beans have softened, lightly mash the mixture to a spreadable texture. Add tomatoes, thyme and rosemary, mix well and continue to cook until entire mixture is heated through. Remove from heat. Add kosher salt and ground pepper to taste. Transfer to serving bowl.
