This hot appetizer dip is made with artichokes, garlic and cheddar cheese--serve with crackers, tortilla chips, crostini or warm pita wedges.
Preheat oven to 325 degrees.
Grease a 7 X 11 baking pan and set aside.
Drain artichoke liquid from 1 jar artichokes into a large skillet. Drain other jar and discard liquid. Chop all artichokes and set aside. Add onion and garlic to skillet and saute until limp.
Beat eggs well with a fork, add breadcrumbs, salt, pepper, oregano, and hot pepper sauce.
Stir in cheese, parsley and the artichoke and onion mixture.
Turn into the prepared pan and bake 30 minutes, or until eggs are set.
Serve cold or reheat at 350 degrees F for 10 to 12 minutes.
Notes:
Great make ahead appetizer; just warmed in the oven just before serving.
