Zesty Hummus


This easy dip can be made ahead. Just process garbanzo beans, salad dressing, garlic, lemon juice, pepper and basil, and then chill overnight.



Ingredients:

  • 1 can of chick peas, rinsed and drained  
  • 2/3 cup of salad dressing (either roasted red pepper, sundried tomato & oregano, or Italian)  
  • 2 cloves of garlic  
  • 1 tbs lemon juice  
  • fresh ground black pepper  
  • 1/2 tsp of basil  

Method

Place all ingredients in a food processor and process till smooth. Pour into bowl and refrigerate overnight. Garnish with parsley when ready to serve. Serve with tortilla chips, vegetables or pita wedges.
