Zucchini Bites

These browned zucchini slices can be served as an appetizer or as a side dish. Serve with purchased spaghetti sauce as a dipper, if you like.
 

Ingredients

  • 1/2 pkg. Ritz crackers- finely crushed
  • 1/3 cup Parmesan cheese
  • 1 Tbsp. garlic powder
  • 1 Tbsp. onion powder
  • 1 Tbsp. seasoned salt
  • 1 tsp. pepper
  • 4 eggs, beaten
  • 2/3 cup milk
  • 4 medium zucchini, cut in 1/4 " slices
  • Olive oil

Method

Mix dry ingredients in a large shallow dish. In another shallow dish, beat eggs and milk together until combined. Dip zucchini in egg mixture and roll in dry mixture to coat. In a large skillet heat olive oil over medium heat. Add zucchini slices in batches, and cook until golden brown, turning once.

 

Notes: I never like zuchinni other then in chocolate cake and bread. We planted zucchini in our garden this summer and my husband thought I should make those sand dollars they have at Red Lobster. I did not know the recipe, so we made this one up!! They were wonderful!!!! Halve the recipe if you don't want to make quite so many.

 

Number of Servings: Approx. 80 slices
