Zucchini Dunkers

Matchstick strips of zucchini are coated with vinegar, seasoned dry bread crumbs, & parmesan cheese, baked, and dipped in spaghetti sauce.
Ingredients
- 4 to 6 zucchini squash
- 1 cup balsamic vinegar
- 1 cup Italian-style fine dry bread crumbs
- 3/4 cup grated parmesan cheese
- Kosher salt (optional)
- 1 can/jar of your favorite spaghetti sauce

Method
Preheat oven to 425 degrees. Cut the zucchini lengthwise into 1/4" square matchstick strips - skin on or off, your preference. Place the zucchini strips into a large plate or pan. Add balsamic vinegar. Toss/mix to ensure all strips are coated. Sprinkle the Italian bread crumbs over all strips. Toss/mix to ensure all strips are coated with the bread crumbs. Add the parmesan cheese to the crumb-coated zucchini strips. Toss/mix again until they all have the parmesan cheese. Place strips on a baking rack so they do not touch each other. Bake at 425 degrees for 20-25 minutes or until browned. Add kosher salt to taste. Remove from oven, place on individual serving plates. Place warmed spaghetti sauce in a shot glass or small bowl. Dunk the zucchini in the spaghetti sauce.
Notes: Fun way to add squash to your meals. I used pre-made breadcrumbs and parmesan cheese to keep it simple.
