Zucchini Tart

Zucchini is sauteed with basil and garlic for the optimal flavor combination. All of this baked with cheese and sour cream, what a dish.
 

Ingredients

  • 1/2 package refrigerated pie crusts, at room temperature
  • 2 medium zucchini, thinly sliced
  • 3 tsp olive oil
  • 3 medium plum tomatoes, sliced
  • 2 cloves garlic minced
  • 1/2 cup fresh basil, chopped
  • 1/3 cup freshly grated Parmesan cheese
  • 1/3 cup mozzarella cheese
  • 1 cup light sour cream
  • 1/2 tsp freshly ground pepper and salt

Method

Fit pie crust into a 9 inch tart pan according to package directions and trim excess. Prick bottom and sides of pie crust using a fork. Bake pie crust at 450 degrees, for 9-11 minutes, or until lightly browned then let cool. Saute zucchini and garlic in hot oil, in a large skillet, over medium high heat for 2 minutes or until tender. Arrange zucchini in prepared pie crust. Arrange tomatoes on top of zucchini. Stir together basil, cheeses and sour cream. Drop by teaspoonfuls evenly on top of tomatoes and spread gently. Sprinkle with pepper and salt. Bake at 425 degrees for 10-15 minutes or until thoroughly heated and cheese mixture is slightly melted.
